When you’re an Aussie working for 4 Kiwi owners, it can't be an easy life. But Rusty, our Australian head chef, has been given permission to hoist the Green & Gold flag in Kopapa on Australia Day - Sunday the 26th of January. He will be producing some great Australian classics for the day like a Kangaroo burger with beetroot confit relish, baby gem aioli; Avocado on sourdough toast with chilli feta, mint and lemon oil; a Macadamia nut, butternut, goats curd, raisin & rocket salad with vegemite croutons. For the sweet stuff there’ll be Lamingtons and ANZAC biscuits. We’ll have a special cocktail for the day too called G'day Mate! which is made from Bundaberg rum, shaken with lemon, gomme & topped up with Coopers Sparkling Ale.
